Pie Fixes Everything

Pie Fixes Everything provides close to everything. Pies, pies, and pies. And by everything, I basically imply the rhetoric question: «What else do you need aside from pie?»
The pies here are exactly what you want out of the American staple that often succeeds at ruining your quote-​unquote diet. If you are into a variety of flavors, you will find that there is no lack of different flavors at this local establishment. Additionally, those who enjoy the unique stuff will benefit from acknowledging the choices of plum pecan and triple chocolate mousse.
The large offerings are not terribly steep at $ 20, but if you want a little splurge to (possibly, but not likely after tasting) split with a pal, the FM «personal» pies are a good option. The pecan, which is the best one, no arguments, is spot on: creamy, sticky, and sweet.
Oh, they also crank out quiche, Shepard’s pie, and more for you non-​sweet snobs.

At the Austin Flea last Saturday I bought a strawberry-​rhubarb pie for my friend’s birthday from Pie Fixes Everything. The poor lady (Colleen perhaps) was setup outside with a few other artists on one of the coldest windiest days we have had yet. I could not wait for my friend to come over and eat pie with me, and I was not disappointed. The first thing I noticed was how lovely the crust was, with a flower of crust in the middle of the top crust. This pie was so delicious, the perfect crust with a lovely combination of sweetened filling. I enjoyed several pieces this last week, and I already joined the mailing list so I can order my next pie.

AMAZING gluten-​free, dairy-​free (*almost! a little bit of butter in the crust) pies and quiches. The crust is by far the most allergen friendly one I have ever had. Head out to HOPE farmers market on a Sunday and meet the owner Colleen. She is so sweet and always willing to accommodate for special needs.

I discovered Pie Fixes Everything through Farmhouse Delivery. Weekly they have been offering 4 mini pies ($ 20) and a quiche ($ 20).
The quiche was delicious. Last week it was onion, potato, and feta. The eggs were creamy and custardy, the potatoes cooked perfectly, and the crust flaky and crunchy. SO good. I took this for Easter and it was a hit. I will be ordering one next week.
For the mini pies, I got them 2 weeks in a row. The first week was fruit pies, and they were all good. The mango was my favorite (although it could have been stuffed just a bit more) followed by the blueberry/​blackberry, strawberry/​rhubarb, and cherry. I loved the crust too, it wasn’t all soggy.
The next set were more custardy. I loved the pumpkin rum and the chocolate pecan. The lemon not so much, and surprisingly (because I LOVE coconut) I did not care for the buttermilk coconut. They both had a strange aftertaste.
Overall, I love Pie Fixes Everything and I will continue to purchase her pies and quiches!

Colleen’s Pies do Fix Everything or at least makes everybody happier as long as you order enough.
I discovered Colleen and her amazing pies several months ago at the HOPE Farmers Market and I am totally hooked on her savory pies er Quiches while the sweet tooth’s in my family love her fruit and nut pies.
I love that Colleen supports local Farmers Markets by planning her weekly menu around seasonal ingredients. She just requests that all orders be placed by Friday so that she can purchase all the ingredients the next morning at the FM. She will also customize any pie to order Hate onions in your quiche no problem and most pies can be made with spelt, gutten-​free and dairy free.
In the past couple months I have ordered several of her quiches and while a bit pricey at around 20.00 they are perfect for breakfast (fast) lunch (travels well) or a light dinner combined with a salad. I love squash especially when combined with cheese and eggs and her squash quiche is comfort food delicious! I will probably stick with the Squash Quiche when in season but the Breakfast and Chicken Mushroom Quiches are also very good.
For Thanksgiving I ordered a Pecan Pie that was the best I have ever had and it was a huge hit with my family. In fact I felt sort sad because we had 20 people wanting a bite while my Mom’s Pecan Pie was runny and the 10 plus other homemade desserts went unfinished. The Bacon Sausage Breakfast Quiche and Curried Squash Soup were also amazing but not nearly enough for a big family gathering.
