History
Established in 2011.
We began by baking organic cookies from home under the new Cottage Food Law in September 2011. We then moved to a commercial kitchen and began selling at local farmers’ markets in February of 2012. We found there was a large and increasing demand for gluten-free foods at these markets, and after several months of experimentation, we learned how to make gluten-free cookies that were as good or better than our original cookies. So in October of 2012 we decided to focus solely on gluten-free cookies. Sales have been booming since then. In April 2013 we moved to a dedicated gluten-free kitchen, and we have begun expanding beyond farmers’ markets to local coffee shops, restaurants, and retailers.
Meet the Business Owner
Ethan M.
Business Owner
Ethan Moore is a baker and entrepreneur, but also at times a writer, a comedian, a photographer, a scientist, and a teacher and tutor — but he’s always a gentleman and a scholar.
Ethan has a Ph.D. in physics, specializing in Soft Condensed Matter Physics. He decided to leave academia to pursue his own business and artistic interests.
Ethan grew up in southeast Michigan and now lives in Austin, Texas.
