I went to EatBox for lunch at Bonnaroo. They specialize in meatball meals, either in a bowl or on a sandwich. After talking to the counter lady about her recommendations, I ordered the PCB(pork and beef balls, hashbrowns, bacon, and a honey scallion sauce). I was totally underwhelmed by this meal. The meatballs themselves were soggy and rather bland. It appears that if they were seasoned, their spices were washed off in the liquid they were sitting in. The hashbrowns weren’t anything to write home about and reminded me of something that I would get in a Waffle House. It also appeared to be missing the honey sauce that should have been splashed on top. I guess the lack of line should have been an indication that this food truck would be less than stellar.

In the thick of Bonaboooooo I found myself on a constant — often fruitless(quite literally at that) search for quality eats in Centeroo. Until I found Eatbox. Eatbox resurrected my faith in festival food with their phenomenal vegetarian eggplant meatballs topped with fresh spiced yogurt sauce and surrounded by yummy veggies, in a soft white hot-dog length bun. They were unbelievable, and one of the highlights of my Bonnaboooooo adventure. Not only were the lines short, and the service beyond friendly at Eatbox, but they even served up organic fresh popsicles from a separate window out of their food truck. A lovely lady handed out fresh peach, lemon-mint, and chocolate popsicles with a sweet grin. I quickly became obsessed with Eatbox and their formidable servings of healthy food. Their marketing stickers and swag were super sassy with subtle sexual innuendos. I grabbed a handfu even sported one or two during the festival. If you ever get the chance to scope this food truck out a festival definitely be sure to try their eggplant meatball sandwiches. You can taste the goodness and passion that goes into all of the food here. Trust.
