History
Established in 2014.
Since opening in December 2014, Brillig continues to operate as a pop-up — every OTHER Saturday — in the same space that Mighty Good Coffee operates in during the day. WE believe that a good time should be had by all — those in recovery, who abstain from alcohol for religious or health reasons — anyone who’s looking to have a great night on the town, and remember it the next day!

Business Owner
Nic was inspired to create Brillig primarily to cater to those folks who abstain from alcohol, especially because of addiction-related, health or religious reasons. As the mom of two teens, she strives to provide an alternative to the myth that fun — or adulthood — require alcohol consumption. This former chef designs unique beverages that are often inspired by locally produced ingredients and seasonal flavors, with an occasional nostalgic or humorous component.
