Ethiopian cuisine is based on an exotic blend of spices both robust and subtle. A part of each entrée is a traditional bread called injera. Injera is a sourdough-risen flatbread with a unique, slightly spongy porous texture made of Teff, a gluten-free whole grain that is mineral rich and high in protein. This porous structure allows the injera to be a good bread to scoop up sauces and dishes. Entrees are eaten by breaking off a small piece of injera, placing it on the stew or salad of your choice, and pinching your fingers together to pick up the amount of food you desire. The injera under these stews soaks up the juices and flavors of the foods. When the entire «tablecloth» of injera is gone, the meal is over.
