Biltong and droewors
History
Established in 1984.
Yorkshire Biltong is part of Country Butchers (Harrogate) Ltd, a traditional butchers shop based in North Yorkshire. The shop has been established for over fify years and is now run by Tony Colbeck who has worked here for twenty-eight years and his son Wayne for seven.
Four years ago, Tony decided to experiment with a range of classic South African products made on the premises using locally sourced meats. The three main products; biltong, droewors and boerewors were very well received by the shop’s customers and the idea grew.
In the following years the recipies and flavours were developed and refined into what is now a top-quality product. With South African and British customers alike raving about the authentic taste and moorish qualities, Tony decided to take the next step and make these meats available to buy online.
Meet the Manager
Wayne C.
Manager
Wayne is Tony’s son and was apprenticed to the family business in 2004. Wayne thoroughly enjoys food, especially meat — and particularly Biltong. Which is just as well as he is surrounded by it all day. But it also means that Wayne strives to ensure the excellence of the biltong, droëwors and boerewors, which he lovingly produces.
Key to this is a concern that all his meat should be sourced locally from animals that have enjoyed a good life. «A contented beast provides more flavoursome meat», says Wayne.
Wayne lives in a typical Yorkshire village and has a young daughter, Lily, for whom Biltong is proving an excellent teething aid!
Wayne is active in the local community and, like his father, is also a keen sportsman enjoying fly fishing, golf and that most Yorkshire of sports — cricket. Wayne plays for his local cricket team competing in the Nidderdale league as a batsman and all-rounder.
