John McCarthy Free Range Eggs

I always have trouble finding the eggs in shops and supermarkets and I don’t know why. For a start they never seem to have been intelligently placed and there is never a uniform area where they have been designated (ie.milk and bread and far away from the door as possible to increase customer footing)
I’ve started buying eggs from this little stall when I call over to the market on a bustling Saturday afternoon. It’s a family run business and all the products are free range.
Now, 80p for six large free range eggs is fantastic. Most supermarkets will charge in excess of £1.20 for free range and the only price point that is similar would be on battery garb.
Besides the usual eggs they also do duck eggs. duck eggs have been increasingly used by the cheffing community and are often used to give dishes a bit more guys due to the much deeper and denser flavour of the yolk.
I bought half a dozen for £2 and used them to make gourmet home-​made scotch eggs. They were fantastic if I don’t say so myself. If you are trying them use the meat from good quality sausages, season well and use a mixture of toasted breadcrumbs and my secret ingredient, Tayto cheese and onion crisps. Sounds bizarre but it works.
