Mix and pancake and a taco and you get Project Paco! This fun concept is doing the rounds in its very own blue food truck. Often to be found at Street Food Collective, there are savory (The Sunday, filled with streaky bacon, scrambled egg, alfalfa sprouts and a touch of maple syrup, or the Chef’s Favourite boasting chorizo, egg, sautéed red onions and a generous drizzling of sweet chilli) and sweet (apple pie filled with poached Apple, yoghurt, Apple syrup and walnuts) versions to try out. $ 8 each or two for $ 15. No doubt there will be more flavours to come. Meanwhile, try their classics before they become known as that!
