What a delish pizza and it’s all about the calzone here. I was reading up on the competitor site TA for great places to eat and found Spera and it said something about best pizza in the world? Jay Leno had a pizza contest many years ago and the pizza creator lady of Spera competed and won best pizza of the year award in 2008. I read these articles on the counter when I was waiting for my order. I wish I took a photo of the newspaper clipping but I knew other would post. My husband and I ordered a calzone here and it was the best we ever tried hands down. We tried a prosciutto mushroom pizza too(5 euros), but the calzone blew the pants off everything, just amazing. The calzone was ordered with prosciutto and it had so much cheese it was so perfect. The crust and dough were yummy, and I saw how the chef cared so much about each order she created. I chatted up with the cashier and he gave me good tips on vineyards to visit in nearby Tuscany, and other questions I asked. They have seating inside underground down stairs, the waitresses have to go up and down the stairs with the order papers, and then again with the orders. We ate out a to-go order twice from Spera, I highly recommend it! Each pizza or calzone we ordered was 5 Euro! Memorable food, try a calzone 5 euros.

This place is not tourist friendly. However, giving this place 3 stars because the pizza was good and cheap. When we got there we ordered a pizza to go since our hotel is close by. He said 25 minutes. We walked back to our hotel and were back to pick up the pizza twenty minutes later. When we returned they said they didn’t see us so they gave our pizza away. Even though we were back in a timely manner. Had to wait another half hour. Then when asking for them to slice pizza(as we have no utensils at the hotel) they made some rude comments to other staff.

I lived in Firenze for a year and this was by far my favorite place to get pizza. I would highly recommended the calzone– but honestly everything there is to die for.

I am visiting my son in Firenze and this is his favorite pizzeria anywhere … and, I very well understand why. The pizza there is perfetto! I ordered a white mushroom pizza with truffle sauce, and I can honestly say it was the best pizza I have e-v-e-r had. I am headed out to the countryside for the remainder of my trip … but, I am trying to figure out when & how I can make it back to SPERA’s before returning home to Hawaii. Yum!!!

I found Spera on a blog that a local Florentine woman had written. She had recommended Spera, stating it was a great place to have pizza, beer, and catch up with friends. I imagined it to be a local hangout for young(high school or college –age) people. I was wrong, there were families, couples and even a grandmother eating a whole pizza with her granddaughter. We took the 28 bus from the train station and about 2 stops later, were dropped off less than 2 blocks from Spera. The kitchen is on the main floor, and you go down the stairs to the dining area. Already the place was buzzing, but luckily were able to find a table without waiting. What an amazing experience! No menus in English(just the way I like it). The prices are incredible, ½ litro of red house wine for 3 Euros. We ordered 2 pizzas: Vescarosa(sp?) and Prosciutto e Funghi. The first one had amazing flavors. 2 different kinds of bufalo mozzarella, fresh cherry tomatoes, burrata and truffle oil. The prosciutto e funghi was also very good, but lacked a certain pop of flavor. In all, definitely great food for a very very good price. Two people ate for less than 20 Euros.

Pizzeria Spera isn’t open at lunch. They open in the evenings, at 7 pm. They’re closed on Mondays. But this has no bearing on business; you can tell from the group of diehards who cluster in front of the entrance before the 7pm opening in order to be the first seated and served. Service is brisk, and since space is tight(the dining area is below street level, so you descend down a flight of steep stairs upon entering) they do ask that patrons not linger too long. The pizza here is… wonderful. Neapolitan pizza is thicker than the usual pizza, so you can really bite into the crust. There is a fixed list of pizzas, from the classic marinara to the very pizza that earned Elena(one of the main pizzaiouli, or pizza makers) of World Champion Pizza Maker in 2002 — AND an appearance on Jay Leno to make aforesaid pizza. Unfortunately I can’t remember what was in it! =(Some of my favorite pizzas from Spera include fried zucchini flowers, pesto, sundried tomatoes, prosciutto crudo with rucola… mmm. For a surcharge you can substitute buffalo mozzarella, which I would highly recommend if you get the margherita.

Being from California and knowing I’ve never had REALITALIANPIZZA, I strongly recommend this place in Florence. Of course Naples has the best pizza in the world, but this place is a great casual restaurant with excellent pizza. They’re busy all the time but it’s got a great vibe with the young crowd
