May be this is only a Hong Kong thing: for every vegetarian restaurant, there is always a section at the entrance that sells all those vegetarian dim sums and puddings. Bean curd sheet wraps, veggie siu mai, nori rolls, you name them. Instead of actually going into the restaurant and have a proper meal, I am more inclined to just buying a few items from the take away section and walk as i eat. And this is pretty much a reflex to me to go and have a look at the display cabinet to see what looks good from these vegetarian restaurant. One of the must have items for me is the bean curd sheet wraps filled with mixed veggies inside. The sheet is most often chewy but it is supposed to be crisped up from the frying while the interior stays crunchy and light. However, probably due to the fact that they are made in huge batches, the wraps are very likely to be greasy both on the outside as well as the inside. I have a poor habit of taking a piece of tissue paper and remove the excess grease; not just patting on the surface, but also squeeze the lifeblood out of the roll to make sure there’s no oil remain. It is always surprising to me that you need more than one to completely remove the grease; imagine what will happen when you eat all these altogether… I am not sure whether the excess grease is supposed to be part of the eating experience or it is just that I have not yet found the perfect roll yet; but still I am hopeful. Truth be told, the wrap of this joint tasted not bad after me trampling of it using multiple piece of tissue paper.
