We refer to our restaurant as a «nouveau Canadian Bistro»… offering a simple, seasonally inspired menu with fresh, local ingredients at a great value.
History
Established in 2011.
Our first location opened in Yaletown in the fall of 2011 and has enjoyed a loyal following ever since. At the end of our first year of operations we were able to expand our space by increasing the bar and lounge area.
April 2013 saw the opening of our second location in Gastown and we are looking forward to becoming a part of this great neighbourhood. We feel that our approach to casual dining will mesh well with the location and love the new space in the storied Winters Hotel at 102 Water Street.

Meet the Business Owner
Erik H.
Business Owner
Erik Heck started his kitchen career as many others do, at home under the support and supervision of his parents, who shared their passion for using as many local and organic ingredients as possible with Erik.
On graduating from high school Erik took a job as a dishwasher at Earls in North Vancouver and over the next couple years he moved his way up through the kitchen, resulting in his decision to pursue a career in the restaurant industry with a cooking job at Joe Fortes. Erik worked as a garde manger and worked his way up to Sous Chef. Here Erik would meet John Crook, who was Chef de Cuisine under Scott Pratico, the chef at the time, and John, Erik was heavily inspired and influenced in his approach to great food. He joined the opening team of Glowbal Collection’s Italian Kitchen and eventually on to Glowbal Grill as Chef.
After two years At Glowbal Grill, Erik made the decision to partner with John Crook to open up their first venture, The Flying Pig, and the dream became reality.
