I know what Chinese herbalists sell in the herbal shops — exotic amimal body parts. No surprises there. So this shop is two parts. Part butcher and part grocery. They are more complete in the butcher department, and have only a limited selection of groceries, mainly Asian, because this is Chinatown of course. When I go to Chinese butchers, I normally like to get beef brisket because they sell it untrimmed of fat and gristle — all the flavour is intact. However, this visit I was distracted by this: Yes, that is correct. You are looking at it and reading it properly. The translation is not quite correct. See the photo caption. Now I am thoroughly perplexed. This is obviously uncooked and in raw form. I like to cook. So I am wondering what would I do to cook this??? Chinese soup? Blanched? BBQ? Braised? — to make it tender? Steamed? Stir fried? Deep fried? Roasted? Any suggestions? I’m going to Google to see if I can find a recipe! I should mention that the sign also says that they sell it «whole», you get the entire thing for $ 18.99 per pound. That is pretty expensive considering a prime rib roast averages between $ 10-$ 15 per pound. So genitalia or rib roast? Maybe I should cook this up and host a UYE, who’s in? :P
