In China, there is a descriptive term which is known as «Ma– La». Ma or má is the pronunciation of a Chinese character «麻» which refers to the spicy numbing Sichuan pepper. La or là is pronunciation of a Chinese character «辣» which refers to the spicy heat of the chili pepper. A classic example of a Ma-​La dish is the Ma Po bean curd or Mapo toufu. What makes Sichuan pepper unique in the world is its intense spicy taste which develops and can even temporarily numb your mouth and lips. Now you know the reason why we call us Mala express, that is we try to introduce authentic flavor of Sichuan cuisine. Because without the tastes of spicy heat and spicy numbing, it is not an authentic Sichuan cuisine.

A couple from Sichuan China dream of introducing authentic Sichuan cuisine to Canada, They named their business with the pronunciation of spicy hot and spicy numbing in China which is «Mala», in order to make the food prepared in Canada be tasted all most the same in Sichuan China, they import some of the seasoning materials from Sichuan directly, by using those seasoning materials during cooking, people in Canada will have chance to taste what a real Sichuan cuisine is. Because they believe Good food should be enjoyed by the people all over the world.
