History

Established in 1984.

Ginko was one of the very first sushi restaurants in Canada. With a focus on the highest quality ingredients, Owner and Executive Chef Shigeo Kimura, and his son Takuya Kimura, have turned this multi-​generation family business into a Toronto classic.

After 30 years at the helm, Chef Shigeo now volunteers as President of the Japanese Restaurant Association, is an esteemed referee for the International Kendo Association, he is Chief Instructor for the Toronto Kendo Club, and is also the taisho (chief) at Ginko’s infamous sushi bar.

His son, Takuya Kimura, newly returned to Toronto after running a successful catering business in Quebec City is now enlivening Ginko with a focus on sustainability and a return to traditional preparation techniques. In a house that makes it’s own soy sauce, this is a high bar!
