The category of this restaurant should be «Destination Restaurant» or «Fine Dining». There is a quality of restaurant to be found in Belgium that can’t be found in the US(at least not at a comparable price.) We used to regularly frequent one in particular, until it got a Michelin star, which was good for them, but not as good for us as we could no longer afford to go there. Luckily we have found a replacement in the Fleur de Sel and I urge you to enjoy them before they too get a Michelin. I would say the quality of food at the Fleur de Sel is even better than our last favorite destination. Every plate is a beautiful work of art to the eye and a small symphony in the mouth. Within each course, every forkful is different, a variation on the theme. To keep with the theme of a symphony, this bite may have more violin, or that bite will have more brass, but each is a perfect harmony of flavor. We enjoyed a 6-course dinner with wine parings. Each wine was presented in both Flemish and English, with detail as to why it was the perfect pairing for the next course. The courses were presented with detailed introduction so we could enjoy the complexity of flavors we were experiencing. The experience was four hours of complete gastronomic bliss. I’ll be looking forward to my next trip to Belgium to do it all again.
