Specialties

Fugazza recreates traditional Italian baked sandwiches. Our light, tasty focaccia start with artisan sourdough bread, created using a combination of wholemeal, rye and unbleached flour. True to their origins, our sandwiches are baked, not pressed, creating a beautifully light, crisp crust.

Inside each fugazza are fillings of the finest ingredients, such as taleggio and stracchino cheeses, porcini mushrooms and traditionally prepared small goods.

Drawing upon the Italian philosophy of simplicity, quality and balance, each fugazza can be eaten alone or served in smaller portions alongside Tuscan and regionally-​inspired soups and salads.

We aim to share the best of Italy — from our Moretto hot chocolate, to the Abbondio range made by one of Italy’s oldest soft drink makers, and in a first for Melbourne, southern Italy’s refreshing Brasilena coffee with mineral water.

We serve our coffee on vintage Gaggia machines that have stood the test of time.

History

Established in 2011.

Fugazza is the realisation of a dream for owner Simon Michelangeli. He fell in love with traditional Italian baked sandwiches and espresso coffee when he first visited his ancestral home of Lucignana, Tuscany as a 12 year old.

These light, tasty focaccias took on a somewhat mythical element; he could never find their equal at home in Melbourne. Twenty years later he solved that problem by launching his own café.
