What Is A Cheesesteak?
A cheesesteak is a long, delicate soft roll filled with thinly sliced sautéed rib eye beef and melted cheese. Generally, the cheese of choice is American and provolone but some joints in Philly will use a melted offering of their own creation.
The art of cheesesteak preparation lies in the balance of flavours, textures and what is often referred to as the «drip» factor. Other toppings may include fried onions, sautéed mushrooms, ketchup and hot or sweet peppers.
Cheesesteaks are fast, portable and readily available at steak shops, delis, food trucks, pizzerias and even some high-end restaurants throughout Philadelphia and the Tri-State area. Australians have not yet learned to embrace this delicacy but Sparrow’s Philly Steaks hopes to change this.

Sparrows Steaks began operation in Fitzroy Victoria. We specialise in Philadelphia Cheesesteaks and partner with a bar called The Catfish.

Sparrows Philly Cheesesteaks is the brainchild of the Philadelphia Native Geno Sparrow. Having settled in Melbourne Victoria after working around the world Geno desired to have what could be called a «Proper» Philly Cheesesteaks. The concept is simple to grasp and simple to spread: a delicate soft roll filled with thinly sliced sautéed rib eye beef and melted cheese. The Philly Cheesesteak is proving to be a hit with the Australian palate.
